Scrapple: basic recipe

By weight:
4 parts meat (ground or chopped)
3 parts broth
1 part cereal

Cornmeal is traditional, but oatmeal is sometimes used, as is buckwheat flour. Some people use half cornmeal and half buckwheat flour, while others substitute a little wheat germ for some of the cornmeal.

If using cornmeal, add some cool broth first to keep the cornmeal from lumping up. Then cook with the rest of the broth and the meat until it begins to thicken. Stir often and don’t let it scorch. At this point add the seasoning. Use whatever you like and leave the rest. The amounts given below are about right for the meat from one head (or about 8 lbs):

2 T salt
2 T pepper
1 T marjoram
1 T sage
1 t cayenne
½ T nutmeg
Trace of mace
2 T onion (ground or chopped)
½ t thyme
1 bay leaf

Pour into a lightly oiled loaf pan and chill. Turn out, cut to appropriate size, wrap and freeze. When ready to cook, slice and fry until brown outside but still soft inside. Scrapple is traditionally served with maple syrup.

The cereal-to-broth ratio needs to be pretty constant, but you can use more or less meat.

it is a beautiful morning, sunny and breezy.  got out to milk the donuts and everyone was very well behaved.  Obelia is only giving a quart per milking where Ebony and ShirleyBitchFace are giving two quarts each.  Wonder what the problem is.  Maybe Leslie would know, or at least her mom.  After milking I took Ebony and Obelia out for a walk in the world.  Ebony is like Sofia, she follows me everywhere.  It was really nice to have them out.  Then I watered all the animals and went up to weed and set up the prinkler on the garden.  The sun on my back was magic.  Only problem was was Ebony wanted to follow me into the garden to "help'".  Now, I may be a novice gardener but I'm pretty such having a goat in the garden is a big no no.  I managed to get er hout vefore she did andy damage but then she decided to climb the tires and see what the potatoes might taste like. OH EBONY!!  Headed her off at the pass, dont worry Crow.
Unfortunately I have to get cracking inside the house now.  Our kitchen is broken and cannot remain clean, requires about 4 serious cleanings a day, laundry up the ying yang to fold and put away and cheese to make.  I havent done it itn days and hae about 6 gallons to deal with.  Someone suggested goat milk soap, might find a recipe.

Ok, so all you poor souls have heard adnausium about our life, here's more! 
So, it started a few years ago on Valentines day.  Being a spoiled foodie I have certain expectations on days of celebration of what to expect from my dining experience.  ENTER CROWJOY, perhaps you know her.
It is Valentines day and we are getting all dolled up to go out to diner.  Fancy clothes, including dress (not me) jewels, heels, smoking jacket (me) and tuxedo like aparel.  The tiny ones even sport their best. 
We pile into the car and head south, not much out this way except Outback steak house.  That is ok with me cause I'm a steak whore.  on the way we pass Ruby tuesdays and it is packed.  Remember I am a brat so I make a remark like "ooo, look at the big spenders at R.T.s on Valentines".
We keep driving, passing Outback.  Hmmm, where the hell are we going?!  We keep driving and Crow says "GOTTA GO TO THE BATHROOM...NOW!"  So I pull into the Dairy Queen and wait for her int he parking lot.  Finally Ander comes out and tells me to come in with the girls, I am completely confused.  We walk in the the DQ and there in the corner is a table complete with a  table cloth, flowers and candles!
To this day I am ashamed that I wasnt more grashious because Crow had gone to so much trouble and she thought I loved DQ.  But I was all greased out, having had Burger King for lunch, and I really was looking forward to a nice meal.
I will never forget the looks we got from the high school kids and old folks alike, and when they relised I was a chica it made it that much worse(?).
So now our Valentines day tradition is to find the nastiest, funkiest place to eat and give it a try.  We did that in Orlando at a Pizza Hut converted to a Korean resturant (the sign wasnt even in english so we didn't really know what kind of food it was) AND IT WAS THE BEST FOOD EVER!  We went back several times.  We call it adventure dining!  Gotta love Ms. Crow.
Dont know what Ithaca will bring this year... stay tuned.

We had a bit of an incident this morning. It seems the girls got into the mommies "big red bag" suffice it to say that the bags contents are certainly not G rated. Ruby came down stairs with a hand full of "toys" and said mumma what are these icky things?
I thought Ander was going to die!
OH, DEAR.
I'm just glad we didn't have any company as she dropped them on the floor and ran up the stairs AND I'm glad the girls aren't old enough to understand what they were looking at.

I took a mental inventory of what was in my car and how someone might intreprit it's contents. It might be the beginning of an interesting meme.
On the front seat of my "family car" I have:
a HUGE cleaver
a razor sharp 8 inch knife
a box of battery acid
a box of ammo
and
a twelve pack of beer

Sounds like a party doesn't it!?

Now any of you who know me know I am a gentle giant...right~

Oh my god I'm in big trouble! I just came in from the tundra with my youngest. We were out side plowing the neighborhoods driveways. Mofe refused to let me take her back home because she wanted to ride on the tractor with Big Mummah...even though she was fffffreeezing (10 degrees and windy).
When we did finally come in and pealed off our layers of frosty clothes we got the hot cocoa going post haste. After the Mofe's first cup (gone in seconds)she came into the kitchen and looked up at me with giant blue eyes and bright pink cheeks and says "Mumma, can I have some more cocoa, PLEASE?! Please Mumma can I?" Oh my god, now I know I adore my girls, no question, but at that moment I would have given that child absolutely ANYTHING! I got totally lost in my babies eyes. I never felt that kind of ovary melting power before. My precious girl. I love you so!
Boyz beware of this one she will have mystical powers over you...and I don't suggest you piss off her fierce mothers either, they are armed with magic and firearms!

my little buckie. my first ever, see the little buttons, thought is was a doe. We will get several lovely meals out of him and I am tanning the hide.
I thank him for his ultimate sacrifice for me and my family. i hope I showed him appropriate respect.

THANK YOU YOU WONDERFUL FAMILY OF STRANGERS!!  My wife gave me an album full of cd's of all sorts of genres.  Alphabetically organized ta boot!  Also an amazing collection of compilation CDs that I have no idea what they are.  I have been starved for music and now I have a Christmas buffet to choose from!  Thank you for your efforts, and input. 
I have had a wonderful holiday, hope you all have too.
Love to all the strangers that know more about my life than, I am sure, i have any idea.
